After watching two movies on Netflix and polishing off the rest of the vegan ice cream I bought the other day, it was nearly one in the morning. This is when most people would go to sleep, not me though! I thought to myself, “Well, this is the perfect time to re-design my blog layout.” And here it is! I wanted to try something simpler and easier to navigate. The changes aren’t too drastic, but of course they are noticeable! Now, about that vegan ice cream . . . . it is the brand Luna & Larry, and even if you are not dairy free I would recommend that you try it! It is made with organic coconut milk, and they use organic agave instead of refined sugar. There really are only minimal ingredients in each flavor. Can ice cream be healthy? I am going to go with yes because I could eat fruits and veggies all day, every day and I would not be satisfied unless I could have some ice cream here and there. My favorite Luna & Larry flavor is the chocolate and peanut butter (no surprise there, that is the one I just finished). Hopefully this isn’t TMI for anyone, but is that not the perfect flavor to pick when your on your period? A vegan ice cream with actual healthy fats from the coconut, and chocolate and peanut butter are known for being rich in magnesium. My mom always told me that one of her best friends growing up would say, “I need chocolate!” Maybe that is true. I’ve never had the worst symptoms as far as cramps go, but this time around it really hit me, as well as the lower back pain. I am weird about taking medicine, because I like to be in tune with how my body is feeling. Healthy foods (Luna & Larry vegan ice cream counts in this case hehe) and taking time out of my day for self-care is, in my opinion, the best medicine I can take.
And speaking of food, there are some serious fall vibes in my house this morning! All of the windows are open and it is freezing, but it is that kind of rejuvenating air that comes after having the windows closed for so long. I breathed it in in gulps when my Mom finally gave me to OK to turn the air conditioning off yesterday. Whenever I wake up wrapped in my comforter like a burrito, I immediately make a hot breakfast. In addition to my coffee, which I just added almond milk, raw honey, and cinnamon to, I made this concoction of oatmeal. Here is my recipe in case any of you want to make it! I eat a lot of oatmeal, especially during the colder months.
❤ 1/4 oats + 1/2 water
❤ Heat up the oats and water in the microwave for 30 seconds, and while that is cooking, dice up 1/2 of an apple (I used gala because they’re my favorite, but use whatever fits the flavor profile you prefer!).
❤ Take oatmeal out of the microwave, and add in the diced up apple. Stir, and then pop it in the microwave for 1 minute, stirring again halfway through.
❤ Once your oats and apple pieces are done cooking, add 1 1/2 teaspoons of coconut sugar and stir
❤ Add unsweetened vanilla almond milk to your liking, and stir (I feel like stirring after adding in each ingredient makes a big difference in terms of taste, and I love adding almond milk to the steaming hot oats to make the dish feel rich and souplike, but you do not have to add a lot of almond milk like I do.)
❤ Finally, add a big scoop of raw almond butter on top! Okay, I stir this in too. It makes the bowl so much more creamy since I add the almond milk after cooking the oats and apples in water.
I would love to know if any of you try this at home, or make anything similar! I eat oatmeal several times a week for breakfast, and sometimes for dinner when I want something quick and healthy, so I am always looking for ways to spice up my oatmeal (which just sounds like a boring word, doesn’t it?).
